Ingredients For cold sesame noodles with summer vegetables

1/3 crice vinegar, unseasoned

1/3 cvegetable oil

1 Tbspsriracha sauce

1 Tbsptoasted sesame oil

8 csummer vegetables, cut into matchsticks (cucumber, carrots, radishes, bell peppers, etc)

8 ozsoba noodles, may sub vermicelli if you can't get soba noodles

1 ccilantro leaves and tender parts of stems, loosely packed

3scallions, thinly sliced

1 Tbspsesame seeds, black or toasted white, your choice
How To Make cold sesame noodles with summer vegetables

1Whisk the first four ingredients in a large bowl. Add the vegetables; toss to coat. Season with salt and pepper.

2Cook noodles in a large pot of boiling salted water, stirring occasionally, until al dente; drain. Run noodles under cold water to cool them; drain well and add to the bowl with the vegetables.

3Add cilantro and scallions; season to taste with salt and pepper. Sprinkle sesame seeds over and serve.
