You’re going to love these puff pastries. They’re quick to make, and it’s possible you might have all the ingredients you need at hand. If you don’t have the exact ingredients… improvise a bit. One of my instructors said that all chefs are really mad scientists in disguise. When I do a catering job, I often make a smaller version of these, and no matter how many I make… I never seem to make enough. Well, you ready… Let’s get into the kitchen.

Ingredients For turkey, bacon & cheese puff pastry

8 ozthinly sliced turkey, available at your deli

4 sliceswiss cheese

4 slicecheddar cheese
-
4strips of bacon, cooked and diced

4pieces of puff pastry 5 inches by 5 inches

2 tspdijon mustard
-
1 tspyellow mustard
-
1 tspfresh honey
-
1 mdegg
-
kosher salt, or to taste

freshly ground black pepper, or to taste

dried basil for topping
How To Make turkey, bacon & cheese puff pastry

1PREP WORK High Ho, High Ho… It’s off to work we go.

2Gather your ingredients.

3Cook the bacon until browned, and then dice and reserve.

4Defrost and lay the puff pastry on a clean dry surface.

5Break the egg into a small bowl, add a tablespoon of water, and whisk until incorporated.

6Mix the dijon mustard, the yellow mustard, and the honey together in a small bowl.

7MAKING THE PUFF PASTRIES

8Place a rack in the middle position, and preheat the oven to 400f (205c)
-
9Using a pastry brush, brush 1/4 of the mustard on each square.

10For each square, layer with 1 slice Swiss cheese, 1 slice turkey, 1 quarter of the chopped bacon, and 1 slice of cheddar.

11Chef’s Note: There are all kinds of sliced turkeys available. You’ve got regular, smoked, honey, Cajun… you name it. Choose your favorite variety and go for it.

12Add some kosher salt, and pepper, to taste… or not.

13Brush some of the egg wash on the edges of each square.

14Fold into a triangle, and then seal the edges with a sealing tool, or the tines of a fork.

15Place on a parchment-lined baking sheet, and brush the tops with more of the egg wash. And at this point sprinkle a bit of dried basil on top of each one.

16Bake in the preheated oven for 20-25 minutes, or until the puff pastries are a beautiful golden brown.

17Serve alone, or with a small tossed salad. Enjoy.
