This is a light dish to serve for lunch or brunch. Other vegetables can be substituted, if desired.

Ingredients For spinach fritatta

  • 10 oz
    frozen chopped spinach, thawed and drained
  • 1/2 c
    chopped onion
  • 1/2 c
    sliced mushrooms
  • 1/2 c
    shredded cheddar cheese
  • 2 Tbsp
    parmesan cheese
  • 4
    egg whites
  • 1/2 tsp
    baking powder
  • dash of seasoned salt, garlic powder and cajun seasoning

How To Make spinach fritatta

  • 1
    Cook thawed and drained spinach according to package directions. Season and set aside. In medium skillet, spayed with cooking oil spay, saute' the onion.

    Add the spinach and cook a few minutes. Whisk the egg and egg whites in a medium bowl. Add the cheese and spinach and onion mixture and spoon the mixture into a deep dish pie plate that has been sprayed lightly with cooking oil spray.

    Bake in a preheated oven at 375' for 25 minutes or until a testing knife comes out clean. Enjoy!! May be made with 10oz. frozen Asparagus spears, chopped, if desired.
