spicy spanish rice
I actually combined ingredients from 3 different recipes to make this. Unstuffed Pepper Casserole, Stuffed Peppers & Spanish rice, from this site. When I served it with a salad to my husband last night, he said "I'll just have the salad". He finally took a bite, & ended up going back for seconds! LOL! Thanks for the inspiration! I think we found a winner! I will add pics next time I make this.

Ingredients For spicy spanish rice

1 lbhot pork sausage, (jimmy dean)

1green bell pepper, diced

1red bell pepper,diced

1 mdonion,diced

1 cantomato sauce,15 oz
-
1 canpetite diced tomatoes
-
2 cwater
-
1/4 chot banana peppers,diced
-
2chicken boullion cubes
-
1 Tbspgarlic powder
-
1 Tbspitalian seasoning
-
1/4 cshredded parmesean cheese
-
1 citalian blend cheese
-
1 Tbspworcestershire sauce
-
1 1/2 clong grain rice(uncooked)
How To Make spicy spanish rice

1Preheat oven to 350. In a large oven proof pot, brown sausage,bell peppers, & onions. Drain if needed, mine didn't.

2Dissolve boullion cubes in water in microwave.Add to sausage & veggies.

3Add tomato sauce, tomatoes, seasonings, hot peppers, &worchestershire sauce, stir to combine. Simmer over medium heat for about 10 min.

4Add rice, stir. Add parmesean cheese & 1/2 cup italian blend,stir.

5Put in oven uncovered for 35-40 min, stirring ocassionally. If it seems too dry, add a little water.

6Top with the rest of the cheese & return to oven until cheese is melted. Allow to sit for 5 minutes before serving.
