Ingredients For shepherds pie

1recipe pie crust,makes two 9 inch crusts

2 lbground lamb

2 stalkcelery,diced
-
1 1/2 lgcarrot,diced

1 mdonion,diced
-
1 lgshallots,diced

2 clovegarlic,minced
-
6 cmashed potatoes
-
1 tspsalt and pepper
-
1 1/2 tsprosemary, dried

1 tspthyme, dried

3 Tbspworcestershire sauce

3/4 ctomatoes, canned and chopped, with liquid

3 Tbspall purpose flour

1/2 stickbutter, unsalted,melted
How To Make shepherds pie

1First you'll need to make the crust: 2+1/2 cups flour 2-sticks very cold unsalted butter,diced small 1-tbsp.sugar 1/2 tsp.salt 1/4 cup of ice water(may need more,add in small increments if needed.) Combine the flour,salt,sugar. Add the butter,mix well with your hands,add the water and mix with a rubber,spatula with the water until the dough forms. Cut into two pieces,wrap in plastic wrap and place in the fridge until ready to use.

2Saute the onion,shallot,garlic in the oil until just browned,add the celery,carrot,saute for ten minutes more,season with the spices and add the Worcestershire sauce and tomatoes. Add the ground lamb and break it down with a spoon until everything is nicely browned,4-6 minutes.

3Sift the flour over the meat mixture and stir until well incorporated,2-3 minutes.Set to the side to cool. Roll out your dough to cover two Pyrex pie plates,ten or twelve inch plates. Spray the bottoms and dust with four before forming the dough into the plates.

4Divide the mixture between the two pie plates,spread the mashed potatoes over the tops and add your own decorative touch if desired. Divide the melted butter over the tops of the pies,bake in a pre-heated 400 degree oven for 20-25 minutes,then lower the oven to 350,continue to bake for another 10 minutes,remove and let them set for a minute or two before slicing and serving,enjoy!!! :)
