My Ukrainian grandmother taught me how to cook but never measured anything. I still cook the same way today, 50 years later, even when putting together something from the other side of my ancestry. So a lot of my measurements say "a splash of this" or "a handful of that" or "about a cup" in my notes. I've tried to assign them measured amounts here. Here's a nice Italian comfort-type food, good on a cold night, or any time.

This sausage and kale with pasta recipe is a wonderful rustic Italian dinner. Sauteing the kale brings out its peppery notes. Combined with the browned Italian sausage and pasta, it makes for a hearty meal. Deglazing with a touch of white wine adds almost a buttery flavor. Folding in freshly grated Parmesan adds a touch of saltiness and elevates the pasta dinner to another level.

Ingredients For sausage and kale with pasta

  • 1 lb
    Italian pork sausage, in bulk or casings removed and crumbled
  • 1 Tbsp
    olive oil
  • 2 clove
    garlic, minced (optional)
  • 1/2 lb
    fresh kale, chopped
  • 3/4 c
    chicken stock or broth
  • 1/2 lb
    pasta of choice, cooked
  • splash of white wine
  • 1/2 c
    grated hard cheese (Parmesan, Romano, etc)

How To Make sausage and kale with pasta

  • Brown the crumbled sausage.

    Brown the crumbled sausage in a bit of olive oil (if desired).
  • Add minced garlic.

  • Add chopped kale and saute.

    Add the chopped kale. Then saute until the kale is tender; stirring often.
  • Add wine.

    Add wine here to deglaze pan.
  • Add chicken stock and cooked pasta.

    Add chicken stock and pasta; stirring to combine.
  • Stir in grated Parmesan cheese.

    Add about 1/4 - 1/2 cup of grated cheese. Stir until the cheese, broth, and fats combine to make a coating. Add more broth if you want it more saucy. I usually find that it's coated well enough already.
  • Toss on a platter.

    Toss it on a plate. Top with some extra grated cheese and then mangia! Good hearty Italian-style comfort food on a cold winter's night.
