1 pkgsmoked sausage, sliced

1/2orange bell pepper, thinly sliced

1/2yellow bell pepper, thinly sliced

1 Tbsptomato paste

2 clovegarlic, minced

1 cangreen chilies

1 tspginger

1 Tbspred curry paste, thia

1/2 cred wine

1/2 cwater

2 Tbspgreek plain yogurt

How To Make red thai curry with smoked sausage and baked onion

1Preheat oven 400 F. Peel onions thoroughly, slice the top and bottom of onions. Then slice them in half along the equator. Sprinkle olive oil in a baking dish. Place onions with the wide part facing up. Sprinkle olive oil on top. cover with foil. Bake for 20 minutes. Remove foil and cook 20 minutes more until onions are soft and slightly caramelized.

2In the last 10 minutes of cooking. Heat a medium pan over med-high heat. Add bell peppers and sausage and cook until sausage is brown and peppers are soft.

3Add tomato paste, garlic, ginger, and green chilies. Cook for a minute. Raise heat and stir in wine. Stir and add water.Lower heat and Cook together for five minutes. Remove from heat and stir in Greek yogurt. Serve over rice and with baked onion.
