Ingredients For red bean and rice

  • 1 lb
    dry red beans
  • 1/2 lb
    ham, cubed small
  • 1 lg
    onion, chopped
  • 1 c
    chopped green onion, white & green parts
  • 1/4 c
    chopped green bell pepper
  • 1/4 c
    chopped fresh parsley
  • 1/2 tsp
    basil
  • 2
    bay leaves
  • 1/4 c
    butter
  • 1/2 tsp
    salt
  • 1 tsp
    cayenne pepper

How To Make red bean and rice

  • 1
    Place beans in a large pot. Cover with water. Bring to a rolling boil for 2 minutes. Remove from heat and let soak overnight.

    In the morning, Bring to a boil again. Add remaining ingredients. Reduce heat and simmer for at least 3 hours. The beans will become creamy but most will remain whole.

    Add water while cooking if needed.

    Serve over fluffy long grain rice.
