I found this recipe some time ago who knows where and had not gotten around to making it. When I did make it, I was surprised to see how fast and easy this dish is prepared - and how delicious it is!

Ingredients For rasberry chicken

  • 4
    boneless, skinless chicken breasts
  • 1/4 c
    olive oil
  • 4
    cloves garlic, minced
  • 1 lg
    shallot, sliced thinly
  • 1 c
    chicken stock
  • 1/2 c
    white wine
  • 6 oz
    sliced mushrooms
  • 1 c
    fresh rasberries
  • 1 Tbsp
    unsalted butter
  • 1 tsp
    grated lemon zest
  • 1 Tbsp
    balsamic vinegar
  • dash
    kosher salt/black pepper

How To Make rasberry chicken

    Sear chicken 3 minutes on each side in the olive oil. Remove from heat. Same skillet add garlic and shallot, cook one minute.

    Add chicken stock and wine. cook until reduced, about 10 minutes. Add the sliced mushrooms and lower heat to simmer.

    Return chicken to the skillet, cover and cook until chicken is cooked, about 10 minutes. Add rasberries, butter, balsamic vinegar and lemon zest. Cook uncovered one minute.
