I found this recipe some time ago who knows where and had not gotten around to making it. When I did make it, I was surprised to see how fast and easy this dish is prepared - and how delicious it is!

Ingredients For rasberry chicken

4boneless, skinless chicken breasts

1/4 colive oil

4cloves garlic, minced
-
1 lgshallot, sliced thinly

1 cchicken stock
-
1/2 cwhite wine
-
6 ozsliced mushrooms
-
1 cfresh rasberries
-
1 Tbspunsalted butter
-
1 tspgrated lemon zest
-
1 Tbspbalsamic vinegar
-
dashkosher salt/black pepper
How To Make rasberry chicken

1Sear chicken 3 minutes on each side in the olive oil. Remove from heat. Same skillet add garlic and shallot, cook one minute.

2Add chicken stock and wine. cook until reduced, about 10 minutes. Add the sliced mushrooms and lower heat to simmer.

3Return chicken to the skillet, cover and cook until chicken is cooked, about 10 minutes. Add rasberries, butter, balsamic vinegar and lemon zest. Cook uncovered one minute.
