How To Make quinoa stuffed acorn squash
-
1Cut the squash in half and scoop out the insides. Mix the butter and sage together. You can use any seasoning you want. I like the flavor the sage gave. Bake on a sheet pan until tender- 45 minute - 1 hour at 350.
-
2While those are baking, start your quinoa. You need 1 part quinoa to 2 parts liquid. I used water, but you could use a stock if desired. Bring the liquid to a boil, add the quinoa, reduce heat and let simmer until the liquid is absorbed- about 10-15 minutes.
-
3Time to start the veggies. Grate, dice or slice as directed in the ingredient list. Heat oil over medium heat and add veggies. Stir until tender.
-
4Add the veggies to the quinoa and mix together. Now just stuff the squash halves.
