potato "tacos"
I saw these "tacos" being made on the Cooking Channel and thought they would be good.My Grandchildren love potatoes so I made the tacos for them when they came to visit,they LOVED them! I hope you enjoy them as much as they did.

4 baking potatoes

1 lb ground sirloin

1 pkg. (1-1/4 oz.) taco seasoning mix

1 c colby cheese,shredded

4 green onions,minced

1 c lettuce,shredded

1/2 c sour cream

1 c chunky tomato salsa
How To Make potato "tacos"

1Preheat oven to 425ºF.

2Prick each potato several times. Bake 45 min. or until tender.

3Brown the meat in a skillet,add seasoning mix according to package directions.

4When potatoes are tender, slice the tops of the potato off,sprinkle inside with salt and pepper to taste,mashing potato a bit.Top with meat mixture and remaining ingredients.
