Ingredients For popeye pie

3large eggs, beaten

1/2 cmilk
-
3/4 clight mayonnaise

2 Tbspflour
-
1-10 oz. pkgfrozen, chopped spinach, thawed and squeezed dry

1/2 cshredded cheese, cheddar or swiss

1/2 cchopped scallions or green onions
How To Make popeye pie

1Preheat oven to 375 degrees. Combine all ingredients in a bowl and mix well.

2Spray a 9" glass pie plate or 8" square baking dish. Pour in egg mixture.

3Bake for 45 minutes or until light brown and puffy. Serve immediately. Leftovers also taste good cold.

4Note: You can substitute light ingredients like egg substitute, skim milk, and lower fat cheese with little effect on the taste.
