2 tspolive oil, extra virgin

1 mdonion, sliced

2 clovegarlic

1 1/2 tspground cumin

1/4 tspground red pepper (cayenne)

1 lgsweet potato, peeled and cut into pieces

1 cbulgur (cracked wheat)

1 canstewed tomatoes
-
1 cangarbanzo beans, rinsed and drained

1 canblack beans, rinsed and drained

1/2 cdark seedless raisins
How To Make moroccan spiced sweet potato medley

1In nonstick 12 inch skillet, heat oil over medium heat until hot. Add onion and cook, covered, about 8 minutes or until tender and golden. Stirring occasionally.

2Add garlic, cumin and ground red pepper. Cook 1 minute, stirring.

3Add potatoes, tomatoes, bulgur and 2 1/4 cups water. Heat to boiling over medium-high heat. Reduce heat to medium-low; cover and simmer about 20 minutes or until potatoes are fork tender.

4Stir in beans, and raisins. Heat through.
