This recipe is courtesy of Success Rice. My family adds 2 cooked and cubed chicken breasts for a one skillet meal.

Ingredients For mexican rice

2 bagsuccess white rice
-
1 tspvegetable oil
-
2 cloveminced garlic
-
1 mdchopped onion
-
1/2 cchopped green bell pepper
-
1 smjalapeño pepper, seeded & chopped (optional)

1 tspcumin
-
1 can(8 oz.) tomato sauce
-
1chicken flavored bullion cube
-
1/4 cfresh cilantro, chopped
-
lime wedges, for garnish
How To Make mexican rice

1Prepare rice according to package directions, cooking only 8 min.

2Heat vegetable oil in a large skillet over medium heat. Add garlic and saute for 30 seconds.

3Stir in onion, bell pepper, jalapeño and cumin, cook for 5 minutes.

4Add tomato sauce and bullion cube, stir until bullion cube dissolves, add cooked rice and stir until heated though.

5Serve topped with cilantro and garish with lime wedges
