Ingredients For steak nacho baked rigatoni

  • 2 c
    crushed Doritos, divided
  • 1 lb
    uncooked rigatoni pasta
  • 1 Tbsp
    avocado oil
  • 1 lb
    beef stew meat
  • 1 lg
    vidalia sweet onion, peeled and chopped
  • 4
    pepperoncini peppers, seeded and diced
  • 2 Tbsp
    steak seasoning
  • 2 tsp
    ground cumin
  • 2 Tbsp
    margarine
  • 1/4 c
    all purpose flour
  • 1
    packet taco seasoning mix
  • 1 c
    heavy cream
  • 8 oz
    cream cheese, softened
  • 1 can
    diced tomatoes and green chilies, drained
  • 2 c
    shredded mexican cheese blend, divided

How To Make steak nacho baked rigatoni

    Preheat oven to 350 degrees F.

    Coat a 13- x 9-inch baking dish with cooking spray. Add 1 cup crushed Doritos.

    Cook rigatoni pasta according to package directions; drain. Transfer to a baking dish. Add remaining crushed Doritos; mix well.

    Heat avocado oil in a large, deep skillet over medium-high heat. Add beef stew meat, chopped vidalia onion and diced pepperoncini peppers. Cook and saute for 6 minutes until the meat is well done and the vegetables are tender.

    Season with steak seasoning and ground cumin. Remove from heat.

    Melt margarine in a medium saucepan over medium heat. Add flour and taco seasoning mix; whisk well for 1 minute or until it turns into a roux.

    Combine the heavy cream, cream cheese, diced tomatoes and green chilies and 1 cup shredded Mexican cheese blend. Stir together and simmer for 3 minutes until the sauce is blended and thickened.

    Mix in the beef mixture together until combined. Remove from heat.

    Pour into a prepared baking dish with rigatoni pasta; stir well. Sprinkle with remaining shredded Mexican cheese blend and spread them evenly.

    Bake for 25 minutes or until the cheese is melted.
