2 ccrushed Doritos, divided

1 lbuncooked rigatoni pasta

1 Tbspavocado oil

1 lbbeef stew meat

1 lgvidalia sweet onion, peeled and chopped

4pepperoncini peppers, seeded and diced

2 Tbspsteak seasoning

2 tspground cumin
-
2 Tbspmargarine

1/4 call purpose flour

1packet taco seasoning mix

1 cheavy cream
-
8 ozcream cheese, softened

1 candiced tomatoes and green chilies, drained

2 cshredded mexican cheese blend, divided
How To Make steak nacho baked rigatoni

1Preheat oven to 350 degrees F.

2Coat a 13- x 9-inch baking dish with cooking spray. Add 1 cup crushed Doritos.

3Cook rigatoni pasta according to package directions; drain. Transfer to a baking dish. Add remaining crushed Doritos; mix well.

4Heat avocado oil in a large, deep skillet over medium-high heat. Add beef stew meat, chopped vidalia onion and diced pepperoncini peppers. Cook and saute for 6 minutes until the meat is well done and the vegetables are tender.

5Season with steak seasoning and ground cumin. Remove from heat.

6Melt margarine in a medium saucepan over medium heat. Add flour and taco seasoning mix; whisk well for 1 minute or until it turns into a roux.

7Combine the heavy cream, cream cheese, diced tomatoes and green chilies and 1 cup shredded Mexican cheese blend. Stir together and simmer for 3 minutes until the sauce is blended and thickened.

8Mix in the beef mixture together until combined. Remove from heat.

9Pour into a prepared baking dish with rigatoni pasta; stir well. Sprinkle with remaining shredded Mexican cheese blend and spread them evenly.

10Bake for 25 minutes or until the cheese is melted.
