My son decided to do his own version of homemade lasagna, remembering a time that I had made it when he was little (mine came out of the Better Homes and Garden cookbook from the '70's). He is a great cook and came up with this recipe, then posted it on his facebook page. A lot of people, me included, begged him for a written recipe, which he finally wrote up.

    italian ground sausage
  • 1 jar
    four cheese pasta sauce
  • 12
    uncooked lasagna noodles
  • 1/2 bag
frozen chopped spinach, or 2 cups of fresh
  • 1/2 c
    grated parmesan cheese
  • 4 clove
    chopped garlic
  • 2 c
    mozzarella cheese, shredded
  • 4 c
    ricotta cheese
  • 1 tsp
    dried oregano
  • italian seasoning
  • 2 Tbsp
    olive oil
  • 1 lg
    egg
  • 1 md
    onion, chopped

How To Make klint's homemade lasagna

  • 1
In a sauce pan, cook the sausage until no longer pink. Add the onion and garlic; saute for another 4 minutes. Add pasta sauce to the mixture and set aside.
  • 2
In a medium bowl, blend ricotta cheese, egg, 1/4 cup Parmesan cheese and chopped spinach; set aside.
  • 3
Coat a 9x13 baking dish with the olive oil. Spread 1 cup of sauce mix on the bottom. Top with 3 of the uncooked lasagna noodles. Don't worry, they will soak up liquid when you place the dish in the oven.
  • 4
Spread 1/4 of the ricotta cheese mix on the noodles and layer on 1 cup of the sauce mix.
  • 5
Sprinkle 1/2 cup mozzarella on top. Lightly sprinkle Italian seasoning on top.
  • 6
Repeat the steps 3 more times. Sprinkle with oregano.
  • 7
Preheat oven to 350 degrees and bake for 45 minutes until hot, bubbly, and awesome. Let stand for 10 minutes before slicing. Enjoy
