Ingredients For eggplant parmesan

  • 2 lg
    eggplants, peeld n slicd lengthwise 1/2" thickness
  • 1 1/2 qt
    my gravy aka red sauce....or someones elses ;)
  • 1 pkg
    flvrd breadcrumbs...4 cups mayb more
  • 4 lg
    eggs
  • 16 oz
    mozzarella, slicd 1"x2"...around that size!
  • 2 c
    parmesan cheese
  • vegetable oil for (the dreaded ) fryn.....i hate the clean up :0

How To Make eggplant parmesan

    IN A PIE PLATE WHISK EGGS....IN ANOTHER PLATE ADD BREADCRUMBS. THIS IS OUR BREADING STATION

    TAKE EGGPLANT SLICES ONE AT A TIME AND DIP IN EGG THE INTO BREADCRUMBS FLIP N BREAD OTHER SIDE...PUT ON PLATE N CONTINUE UNTIL ALL SLICES R BREADD.

    HEAT UP VEGETABLE OIL IN LARGE PAN....UNTIL OIL STARTS TO RIPPLE. ADD A FEW SLICES OF BREADD EGGPLANT N FRY FOR A FEW MIN ON EACH SIDE OR UNTIL GOLDEN BROWN.

    PLACE FRIED SLICES ON A PAPER TOWEL LINED PLATE. COVER WITH ANOTHER PAPER TOWEL N COMPLETE FRYN REMAINN EGGPLANT SLICES....I ADDED 1/8 CUP OF ADDTNL OIL AFTER EACH FRYING....OR AS NEEDD.

    NOW FOR THE LAYERN.....SPOON ABOUT 1/2 CUP OF GRAVY AKA RED SAUCE INTO A 9x13 BAKING DISH NEXT PLACE EGGPLANT OVER GRAVY THEN PLACE MOZZARELLA SLICES ON NEXT

    NEXT SPOON ON MORE GRAVY ...ABOUT A CUPAND THEN SPRINKLE HALF CUP OF PARMESAN CHEESE. THEN REPEAT LAYERS....LEAVE 3 or 4 SLICES OF EGGPLANT TO B THE LAST LAYER ;)

    ONCE LAST SLICES R PLACED ONTOP SPOON ON A CUP OF GRAVY N SPRINKLE WITH PARMESEAN CHEESE.

    COVER BAKN DISH WITH FOIL N BAKE FOR 45 MINUTES ON 350...THEN REMOVE FOIL N BAKE FOR 15 MINUTES.

    REMOVE FROM OVEN...CUT A NICE SIZE SQUARE ...SPOON ON EXTRA GRAVY IF DESIRED N SPRINKLE WITH PARM CHEESE N ENJOY :)
