I had a bag of thawed shrimp and some tomatoes I needed to use up. This dish was delicious over my Basmati rice. Just the right amount of spice. Quick and easy...what's not to like? Enjoy!

Ingredients For ~ creole shrimp ~

1 Tbspbutter + 2 tablespoons extra virgin olive oil

3 cloveminced, garlic
-
1 lbmed - large shrimp, peeled and deveined

2 tsptony chachere's, creole or cajun seasoning

4roma tomatoes, chopped
-
kosher salt & cracked black pepper

6 - 7green onion, chopped
-
1/2lemon squeezed
How To Make ~ creole shrimp ~

1In a large skillet, melt butter with olive oil.

2Add the shrimp and cook until turning opaque.

3Add the Cajun seasoning, stir. Now, add salt and pepper to taste. Add the tomatoes and green onion, stir and simmer for 3 - 4 minutes. Squeeze the lemon over all, stir and serve over hot rice immediately. I served over my Saffron Basmati rice...was delicious!
