Ingredients For black bean salad

16 oz. dried black beans

1 stalk celery – chopped

3 cloves garlic – chopped

¼ red onion – chopped

½ cup italian parsley – chopped

1 cup of mixed pitted olives – chopped

2-3 red chili peppers – chopped
-
½ tsp. salt
-
½ tsp. black pepper
-
¼ tsp. red pepper flakes

8 oz. of your favorite macaroni or couscous

dressing:
-
juice of 1 lemon
-
3-4 tablespoons olive oil
How To Make black bean salad

1Prepare beans as directed on package. Combine all of the ingredients for the salad with the beans in a large bowl. Add the seasonings to taste. Combine the ingredients for the dressing; add to the salad and toss. Prepare the macaroni or couscous as directed. Add to the bean salad and toss. Serve immediately or chilled.
