I love meatloaf, but not the day it's cooked. I love cold meatloaf sandwiches. :-) I ate many of these in my lifetime!!

Ingredients For mom's meatloaf

2 lbground beef (bottom round preferred)

2 ccorn flakes (or bread crumbs)

1egg-beaten
-
1 ctomato soup (or tomato juice)

1 tspsalt
-
1/4 tsppepper
-
1 cboiling water
-
4 slicebacon
- ***PREHEAT OVEN TO 350 DEGREES***
How To Make mom's meatloaf

1In a large bowl, combine the beef, corn flakes (or bread crumbs) and beaten egg. Add the tomato soup (or juice) and seasonings. Mix thoroughly. Pack firmly into a loaf pan to shape the meatloaf. Turn the meatloaf out into a small roasting pan. Pour the boiling water over the meatloaf. Place the 4 slices of bacon across the top of the meatloaf. Bake at 350* for 30 to 35 minutes.
