This is a great beef meatloaf substitute. It's much lower in fat, high in protein, and is easy to mix up and bake for a quick meal. It's very moist and the salsa gives it great flavor! Our family loves it.

When trying to eat healthier, you can still enjoy comfort food. This turkey meatloaf is proof of that. We loved the salsa in this meatloaf! It adds moisture to the ground turkey which can be dry at times. The mix of the bell peppers also add to the flavor of the meatloaf. Healthy comfort food!

  • 1 1/4 lb
    Jennie-o lean ground turkey
  • 2
    eggs
  • 1/2 c
    salsa, mild
  • 1/4 c
    chopped red bell pepper
  • 1/4 c
    chopped yellow pepper
  • 1/2 c
    chopped onions
  • 1/2 c
    Italian or plain bread crumbs
  • 1 tsp
    lemon pepper
  • 1/2 tsp
    salt
  • cumin and oregano, optional

  • Oven set to preheat to 350 degrees.

    Preheat oven to 350*.
  • Meatloaf ingredients combined in a bowl.

    In a large bowl, combine all the ingredients.
  • Ground turkey mixture pressed into a loaf pan.

    Press mixture into a loaf pan.
  • Turkey meatloaf baking in the oven.

    Bake for 35 to 40 minutes until cooked through.
