Greek and Middle Eastern flavors. Copycat recipe from a local restaurant. Only thing missing would be a slice of baklava for dessert to make the meal complete! ;)

Ingredients For the mediterranean platter

4 csalad greens (romaine, mixed greens, baby spinach, your choice)

1 ccooked brown rice, leftover to room temperature (short grain preferably)

1/2 chummus
-
2pepperoncinis
-
4-6fresh cherry tomatoes (grape tomatoes, or similar)

1/2small cucumber, sliced
-
1/4red onion, crescents
-
2-3 Tbspfeta cheese
-
6-8imported olives (kalamata, or similar)
-
1/4 ctzatziki sauce
-
1-2 Tbspfresh parsley or fresh basil, minced (for garnish)
-
ground paprika (try a wee bit of spanish smoked paprika or ground sumac for a different twist!)

2lemon wedges (garnish)
-
1-2pitas, cut into triangles
How To Make the mediterranean platter

1Note: amount of ingredients given are all estimated. Wash the greens and spin dry. Place the greens on 1 or 2 salad plates (or a large serving platter.)

2Divide and arrange the remaining ingredients onto the plate(s) or platter, ending with a garnish of fresh parsley (or basil),a sprinkle of paprika and lemon wedges. Decorate the pita triangles around the edge of the plate.
