The flavors in this salad may be better suited for summer, but I enjoy eating it any time - the spare dressing is excellent as a dip for fresh green beans, as well.

Ingredients For kale citrus and avocado salad

4 cfresh kale, torn

1/2grapefruit, sectioned

1/4 cparmesan cheese

1/4 cpistachio nuts, shelled

1/4 cedamame, shelled
- DRESSING

1avocado
-
1/4 csalsa verde
-
1 Tbspraw honey
-
2 Tbsporange juice
-
2 Tbsplime juice

1 Tbspwater
How To Make kale citrus and avocado salad

1Combine all dressing ingredients in a small food processor or blender and blend until smooth. Add more water or orange juice if you prefer a thinner consistency dressing.

2In a large bowl, combine all salad ingredients and half of the dressing. Stir together well. The flavors and consistency are actually best if you allow to chill overnight in a covered container.

3Store then remaining dressing refrigerated up to one week in a tightly sealed container.
