Ingredients For fresh corn and black bean salad

8 ears fresh corn, cut off cob (or frozen corn)

1 can black beans (rinsed and well drained)

2 fresh tomatoes chopped (or 1 large can petite diced tomatoes drained well )

1/2 red onion, chopped
-
1 bunch of fresh green scallions, chopped
-
1 red bell pepper, chopped
-
1 bunch fresh cilantro, chopped
-
juice of 3 limes
-
kosher salt and cracked black pepper to taste

fresh avocado, cut into large chunks [optional, add just before serving]

1/2 colive oil
-
1 clove garlic, chopped [optional]
How To Make fresh corn and black bean salad

1Mix everything together and let sit at room temperature for at least 30 minutes. Serve at room temperature.

2I don't use the avoocado. I also add some olive oil.
