chipotle taco salad

This is easy enough to change to a non-vegetarian dish -- shredded beef, chicken or pork, ground beef -- or even shredded left-over turkey after Thanksgiving!

Ingredients For chipotle taco salad

  • 4 c
    romaine lettuce leaves, chopped
  • 1/2 md
    white onion, thinly diced
  • 1
    roma tomato, diced
  • 1/2 c
    corn
  • 1/2 c
    green pepper, diced
  • 1/2 c
    tortilla chips, broken into pieces
  • DRESSING
  • 1 sm
    can chipotle peppers
  • 1 tsp
    olive oil
  • 2 Tbsp
    half and half
  • salt and pepper

How To Make chipotle taco salad

  • 1
    Combine all salad ingredients except for the chips in a bowl.
  • 2
    In a processor or blender, add all dressing ingredients and pulse until smooth.
  • 3
    Pour dressing over salad and top with chips.
