This was a grocery store recipe that I have altered. It is especially delicious with grilled salmon left overs.

Ingredients For salmon salad

8 ozleftover baked or grilled salmon, cut into chunks

1/3 ccucumbers, diced

1/3 ccelery, diced
-
1/4 cfresh parsley, rough chopped

2 Tbspred onion, chopped
-
2 Tbspreduced fat mayonnaise
-
2 tsplemon juice
-
2 tspcapers
-
lettuce for serving
How To Make salmon salad

1In medium bowl, flake salmon with a fork.

2Add remaining ingredients and mix well. Serve over a bed of lettuce

3You can substitute a 7.5 oz can of wild caught salmon.
