My husband is a big fish eater. Me - not so much... That is why I always try different ways of cooking it. This is a mash-up of a number of different recipes. It smells totally devine while it's cooking!

Ingredients For pistachio crusted salmon with orange yogurt sauce
- SAUCE

3/4 cplain greek yogurt

2 Tbspparsley, chopped

1 1/2 Tbspcapers, chopped

2 Tbsporange juice, fresh

1/2 tsporange zest

salt and pepper to taste
- FISH

1salmon, skinless filet, cut in portions

1egg
-
2 Tbsporange juice, fresh

1 Tbspolive oil
-
1 cpistachio nuts, chopped fine

How To Make pistachio crusted salmon with orange yogurt sauce

1For the sauce, mix all the ingredients and add salt and pepper to taste. This should sit for a while, so the flavours can develop.

2For the fish:

3Heat oven to 375F and spray a cookie sheet with non-stick cooking spray.

4Beat the egg, orange juice and olive oil in a bowl. Season the fish with salt and pepper, dredge in the egg mixture and then cover the pieces with the chopped nuts.

5Place on the cookie sheet and bake for 8-10 minutes or until the fish flakes easily.

6Serve the fish with the yogurt sauce and wild rice.
