Ingredients For oven roasted cod with pepper and onions

1 lgred bell pepper, thinly sliced

1 lggreen bell pepper, thinly sliced

1cubanelle pepper, thinly sliced

1jalapeno peppers, thinly sliced

1 lgvidalalia onion, peeled and thinly sliced

1/2 tspsea salt
-
1/2 tspfreshly ground black pepper

1 Tbspolive oil, extra virgin

1 1/2 lbcod fish
How To Make oven roasted cod with pepper and onions

1Pre heat oven to 400 degress F.

2In a large skillet over medium heat sauté peppers and onions in olive oil until golden brown.

3Season fish with salt and pepper and spray a second, oven proof skillet with cooking spray.

4Add fish to pre heated oven proof skillet and sear 1 side of the cod until browned (about 3 minutes).

5Top with sauted peppers and onions and place entire skillet in pre heated oven. Cook for 15 - 20 minutes (depending on thickness of fish) until fish flakes easily with a fork.
