1 lgmango, peeled and chopped (1 1/2 cups)

1 smsweet red pepper (or red bell pepper), diced

2 Tbspfinely chopped red onion

1 tspground ginger (optional)

2 Tbspchopped fresh mint

2 Tbsporange juice

1 1/2 tspharissa (a hot red pepper sauce)

4 lgsalmon fillets, skinned (about 1 1/2 lb total)

How To Make moroccan roasted salmon with mango salsa

1Preheat oven to 450ºF.

2Combine chopped mango, red pepper, onion, ginger (if using), mint and orange juice in a bowl. Cover and store in refrigerator until ready to use.

3Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
