Ingredients For moroccan roasted salmon with mango salsa

  • 1 lg
    mango, peeled and chopped (1 1/2 cups)
  • 1 sm
    sweet red pepper (or red bell pepper), diced
  • 2 Tbsp
    finely chopped red onion
  • 1 tsp
    ground ginger (optional)
  • 2 Tbsp
    chopped fresh mint
  • 2 Tbsp
    orange juice
  • 1 1/2 tsp
    harissa (a hot red pepper sauce)
  • 4 lg
    salmon fillets, skinned (about 1 1/2 lb total)
  • 1/4 tsp
    salt

How To Make moroccan roasted salmon with mango salsa

    Preheat oven to 450ºF.

    Combine chopped mango, red pepper, onion, ginger (if using), mint and orange juice in a bowl. Cover and store in refrigerator until ready to use.

    Spread harissa over both sides of salmon fillets; sprinkle with salt. Place salmon on a baking sheet coated with cooking spray. Bake at 450º for 20 minutes or until the fish flakes easily when tested with a fork.
