This is an elegant dish that will make it look like you spent all day in the kitchen but is really simple to prepare. The salsa is a kaleidoscope of beautiful colors and fresh flavors. Mango shines through with its added sweetness. Salt and pepper season the fish perfectly. The maple glaze adds just enough sweetness with a hint of caramel flavor. Fresh and light, this is a delightful dinner.

Ingredients For glazed salmon with mango salsa

  • GLAZED SALMON
  • 1 c
    pure maple syrup
  • 3 tsp
    ginger
  • juice of one lemon
  • 1/2 tsp
    lemon zest, grated
  • 3 Tbsp
    soy sauce
  • 1 1/2 tsp
    minced garlic
  • 2 1/2 lb
    center cut salmon filets
  • salt and pepper, to taste
  • MANGO SALSA
  • 1
    ripe mango, peeled and diced
  • 1/2
    red onion, chopped
  • 1
    cucumber, seeded and diced
  • 2 Tbsp
    fresh cilantro
  • 3 Tbsp
    fresh lime juice
  • 1
    jalapeno pepper, chopped fine
  • 1
    avocado, diced
  • 1
    red pepper, diced

How To Make glazed salmon with mango salsa

  • Mango salsa in a glass bowl.

    Make the salsa. Mix all ingredients in a bowl and set aside.
  • Maple marinade in a saucepan.

    In a small heavy saucepan, simmer maple syrup, ginger, lemon juice, soy sauce, and garlic 30 minutes or until reduced, then allow to cool.

    Preheat oven to 350 degrees.
  • Three pieces of salmon in a blue baking dish.

    Lightly oil a shallow baking pan large enough to hold salmon.
  • Maple glaze divided in a saucepan and white dish.

    Divide glaze mixture to reserve 11/2 cup of glaze to serve with cooked salmon and the rest to baste salmon with before and during cooking.
  • Salmon in a baking dish with maple glaze.

    Place salmon skin side down. Season with salt and pepper, if desired. Then brush with glaze.
  • Salmon cooking in the oven.

    Bake for 10 minutes. Then brush on the remainder of basting glaze and bake 10 more minutes or until just cooked through.

    Heat reserved glaze over low heat to use as a sauce. Keep glaze warm and covered.
  • Two salmon pieces with mango salsa and maple glaze.

    Serve salmon with sliced lemon and warmed glaze with mango salsa on the side.

    TIP! Maple glaze may be made up to 2 days ahead, chilled and covered. Bring glaze to room temperature before proceeding.
