This is an elegant dish that will make it look like you spent all day in the kitchen but is really simple to prepare. The salsa is a kaleidoscope of beautiful colors and fresh flavors. Mango shines through with its added sweetness. Salt and pepper season the fish perfectly. The maple glaze adds just enough sweetness with a hint of caramel flavor. Fresh and light, this is a delightful dinner.

Ingredients For glazed salmon with mango salsa
- GLAZED SALMON

1 cpure maple syrup
-
3 tspginger
-
juice of one lemon
-
1/2 tsplemon zest, grated

3 Tbspsoy sauce
-
1 1/2 tspminced garlic
-
2 1/2 lbcenter cut salmon filets
-
salt and pepper, to taste
- MANGO SALSA
-
1ripe mango, peeled and diced
-
1/2red onion, chopped
-
1cucumber, seeded and diced
-
2 Tbspfresh cilantro
-
3 Tbspfresh lime juice
-
1jalapeno pepper, chopped fine
-
1avocado, diced
-
1red pepper, diced
How To Make glazed salmon with mango salsa

1Make the salsa. Mix all ingredients in a bowl and set aside.

2In a small heavy saucepan, simmer maple syrup, ginger, lemon juice, soy sauce, and garlic 30 minutes or until reduced, then allow to cool.

3Preheat oven to 350 degrees.

4Lightly oil a shallow baking pan large enough to hold salmon.

5Divide glaze mixture to reserve 11/2 cup of glaze to serve with cooked salmon and the rest to baste salmon with before and during cooking.

6Place salmon skin side down. Season with salt and pepper, if desired. Then brush with glaze.

7Bake for 10 minutes. Then brush on the remainder of basting glaze and bake 10 more minutes or until just cooked through.

8Heat reserved glaze over low heat to use as a sauce. Keep glaze warm and covered.

9Serve salmon with sliced lemon and warmed glaze with mango salsa on the side.

10TIP! Maple glaze may be made up to 2 days ahead, chilled and covered. Bring glaze to room temperature before proceeding.
