Ingredients For ginger steamed cod lemon butter & pea rice

2cod fillets

1 1/2 cwater

1/2 cjasmine rice

2 Tbspolive oil

1 tspsalt

1/2 cfrozen peas

3nobs of ginger peeled

2lemons one juiced and one sliced thinly

1/2 cwhite wine

1/2 cbutter
-
1shallot minced

1/4 cheavy cream
How To Make ginger steamed cod lemon butter & pea rice

1Salt Cod and set aside.

2Add water, olive oil, salt, rice and peas to pan and bring to a boil. Cover and simmer 20 minutes or until rice is cooked.

3Heat wine and shallot in a saucepan. Bring to a boil and reduce until only 2 tbsp. liquid remain. Reduce to low and whisk in butter a few pieces at a time. Whisk in cream and lemon juice of 1 lemon. Set aside.

4Peel ginger and slice into four slices lengthwise. Place in steamer, I used a bamboo steamer. Place Cod on top of ginger and top with lemon slices. Place top on steamer and place over boiling water. Steam about 5 to 7 minutes until fish is done.

5To serve place pea rice on plate. Top with Cod and drizzle lemon butter sauce over top.
