Ingredients For fish in crazy water with fennel

1/2 cdiced carrot

1/2 cdiced fennel bulb

2 clovegarlic minced

2 Tbspolive oil

1 can14.5 oz. crushed tomatoes

1 cwater

1/2 cdry white wine

1/4 cdices kalamata olives

2 Tbspcapers

zest of 1 lemon

1 Tbsplemon juice

1/2 tspsalt

1/2 tspred pepper flakes

4 mdcod fillets skin removed. can use red snapper, or any firm white fish of your choice
How To Make fish in crazy water with fennel

1Cook carrot, fennel, and garlic in oil in saute pan over medium heat until browned about 5 minutes.

2Add tomatoes, water, wine, olives, capers, zest,lemon juice, salt, and red pepper flakes. Bring to a boil and reduce to a simmer and simmer until reduced by half about 15 minutes.

3Add Cod and cover pan and poach until done 8 to 10 minutes.
