How To Make curry in a hurry shrimp!

1Shell ,and clean shrimp,set aside. In 2 tablespoons of olive oil, warm, the curries, for a few seconds then add onions, celery,garlic, cook until soft.

2Turn heat up, add sherry,stir, then turn heat to med.,add,chicken stock,and coconut milk,soy sauce. Now is the time I add any vegetable I want.Peas are great here,bokchoy, your water chestnuts. Add your shrimp,cover, 5 min. they should be done.

3I like to serve this over fragrant Jasmine rice. Sprinkle with the cilantro, and lime juice.
