cod fish cakes with spicy cheesy grits
Friday night was fish night growing up. We always had grits and Cole slaw with our fish cakes or salmon patties. Roll the cod fish mixtures into balls, fry and serve as an appetizer.

Ingredients For cod fish cakes with spicy cheesy grits

4thick filet of cod

1 csugar

2 Tbspsalt

3 mdpotatoes, peeled, sliced

1/2 tspthyme

1 Tbspold bay seasoning

1 Tbsponion powder
-
1/2 tspcelery salt

1 Tbsplemon juice

1 Tbspgarlic powder

1 Tbspdill, dried

1egg
-
1 cbread crumbs

8-9saltine cracker crumbs
- CHEESY GRITS
-
1 cgrits, quick-cooking
-
1 1/2 ccheddar cheese, shredded

2 tspsmoked paprika
-
1/4 tspcayenne pepper

2-3 dashliquid smoke flavoring

1 smjar pimentos
-
1-2 Tbspbutter

salt and pepper
How To Make cod fish cakes with spicy cheesy grits

1In a large pot mix together sugar, salt and enough water to cover the fish. Over med-high heat cook fish for 5-8 minutes. Place on paper towels to drain. Meanwhile cook potatoes until tender drain and cool.

2In a large bowl, mash potatoes, and crumble up fish. Mix together with the thyme, old bay, onion powder, garlic powder, celery salt, dill, and lemon juice. Taste to add salt and pepper. Mix in egg. In a medium bowl combine bread crumbs and crackers.

3Cook grits according to package. Form patties out of the fish potato mixture. Press into the bread crumbs and saltine crackers. Sprinkle with old bay seasoning and pepper. Heat an 1/4 cup of oil in a skillet to med-high. Fry each patty until golden brown and heated through.

4For the Cheesy Grits: Mix all the ingredients together with the cooked grits. Add a little milk to thin them out. Taste to add more liquid smoke or cayenne pepper.
