Friday night was fish night growing up. We always had grits and Cole slaw with our fish cakes or salmon patties. Roll the cod fish mixtures into balls, fry and serve as an appetizer.

Ingredients For cod fish cakes with spicy cheesy grits

    thick filet of cod
  • 1 c
    sugar
  • 2 Tbsp
    salt
  • 3 md
    potatoes, peeled, sliced
  • 1/2 tsp
    thyme
  • 1 Tbsp
    old bay seasoning
  • 1 Tbsp
    onion powder
  • 1/2 tsp
    celery salt
  • 1 Tbsp
    lemon juice
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    dill, dried
  • 1
    egg
  • 1 c
    bread crumbs
  • 8-9
    saltine cracker crumbs
  • CHEESY GRITS
  • 1 c
    grits, quick-cooking
  • 1 1/2 c
    cheddar cheese, shredded
  • 2 tsp
    smoked paprika
  • 1/4 tsp
    cayenne pepper
  • 2-3 dash
    liquid smoke flavoring
  • 1 sm
    jar pimentos
  • 1-2 Tbsp
    butter
  • salt and pepper

How To Make cod fish cakes with spicy cheesy grits

    In a large pot mix together sugar, salt and enough water to cover the fish. Over med-high heat cook fish for 5-8 minutes. Place on paper towels to drain. Meanwhile cook potatoes until tender drain and cool.

    In a large bowl, mash potatoes, and crumble up fish. Mix together with the thyme, old bay, onion powder, garlic powder, celery salt, dill, and lemon juice. Taste to add salt and pepper. Mix in egg. In a medium bowl combine bread crumbs and crackers.

    Cook grits according to package. Form patties out of the fish potato mixture. Press into the bread crumbs and saltine crackers. Sprinkle with old bay seasoning and pepper. Heat an 1/4 cup of oil in a skillet to med-high. Fry each patty until golden brown and heated through.

    For the Cheesy Grits: Mix all the ingredients together with the cooked grits. Add a little milk to thin them out. Taste to add more liquid smoke or cayenne pepper.
