4flounder filets

1/2 cbread crumbs, seasoned

4 clovegarlic diced small

3 Tbsporganic butter sliced into four pieces

3 Tbspextra virgin olive oil

4 Tbspparmesan cheese

1 Tbspfresh parsley

1 tspsalt

1 tsppepper
How To Make baked flounder with a garlic breadcrumb topping

1Preheat oven to 350. In shallow baking dish, spread 1 tbsp of extra virgin olive oil to coat entire bottom of pan. Set aside.

2In dry skillet on low heat, add bread crumbs and diced garlic. Shake pan and cook until bread crumbs begin to brown. This should take about 5 minutes shaking the pan intermittenly. Watch carefully so that bread crumbs do not burn.

3Season each fillet with salt/pepper and place in baking pan. Top each with a piece of butter. Sprinkle each fillet with garlic/bread crumb mixture, parmesan cheese and chopped parsley.

4Drizzle with remaining olive oil. Bake for 20-25 minutes.
