Ingredients For tuscany chicken

  • 4 lg
    yucon gold potatoes sliced thin
  • 8 oz
    mushrooms sliced
  • 2 Tbsp
    canola oil
  • 2 Tbsp
    olive oil
  • 4 Tbsp
    parmesan cheese
  • 4 clove
    garlic minced
  • 3 tsp
    fresh rosemary minced
  • 2 tsp
    fresh thyme minced
  • 6
    chicken thighs
  • salt and pepper

How To Make tuscany chicken

    Preheat oven 425 degrees.
  • 2
    Arrange potatoes in baking pan. Top with mushrooms. Drizzle the olive oil, half the parmesan, garlic, rosemary, thyme, salt and pepper. Set aside.

    Pour the 2 tbsp. of canola oil in skillet. Season chicken with rosemary, thyme, salt and pepper. Add to oil then throw in garlic. Cook until browned.

    Arrange the chicken on top of the potatoes and pour any oil from the pan on top. Bake 40 to 50 minutes until chicken is done.
