Ingredients For tuscany chicken

4 lgyucon gold potatoes sliced thin

8 ozmushrooms sliced

2 Tbspcanola oil

2 Tbspolive oil

4 Tbspparmesan cheese

4 clovegarlic minced

3 tspfresh rosemary minced

2 tspfresh thyme minced

6chicken thighs

How To Make tuscany chicken

1Preheat oven 425 degrees.

2Arrange potatoes in baking pan. Top with mushrooms. Drizzle the olive oil, half the parmesan, garlic, rosemary, thyme, salt and pepper. Set aside.

3Pour the 2 tbsp. of canola oil in skillet. Season chicken with rosemary, thyme, salt and pepper. Add to oil then throw in garlic. Cook until browned.

4Arrange the chicken on top of the potatoes and pour any oil from the pan on top. Bake 40 to 50 minutes until chicken is done.
