I got this recipe from a friend who is from the south, and she swears this is the best way to fry chicken. I agree!!

Ingredients For the best fried chicken yet

3 cself rising flour

1 ccornstarch
-
3 Tbspseasoned salt, like lawrys

2 Tbsppaprika
-
1 tspbaking soda
-
1 pkgenvelope dry italian dressing mix

2 ozdry onion soup mix
-
1/2 ozpkg dry spaghetti mix
-
3 Tbspsugar
-
3 ccrushed cornflakes
-
2eggs
-
1/4 cwater
-
4 lbvarious chicken parts, like legs, drumsticks, etc.
How To Make the best fried chicken yet

1Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg shallow bowl, combine 1st 9 ingredients.

2In another shallow bowl, beat eggs w/ water. Place 1' of canola or peanut oil in lg deep skillet, heat over med-high heat. Dip each chicken piece into dry coating mix, then into egg mix, then into cornflake mix, and once again into dry coating mix.

3Fry chicken, ( do not crowd the pan,) 4 mins each side. Place chicken in pan, skin side up. Place foil over most of the pan, leaving a little opening to let out steam. Bake 40 mins. Remove foil, bake 5 mins more.
