I picked this basic Sri Lankan curry up from some friends of the family and adapted it to suit our tastes. An easy and delicious introduction to South Asian cuisine, this curry is not spicy, but bursting with flavors and easy enough that anyone can make it! If you prefer your curry spicy, simply add your favorite form of heat either during the cooking process or at the table. Cooks up great from frozen in the slow cooker or crock pot too. Enjoy!!

Ingredients For tasty tomato chicken curry

6chicken thighs, bone in

7 Tbsplarich's roasted curry powder

4 Tbspvegetable oil

2 lgshallots - chopped
-
1 mdonion chopped
-
3 clovegarlic - chopped
-
2 cancrushed tomatoes (28 oz)

1bay leaf
-
1 1/2 Tbspsalt
-
1 1/2 Tbspsugar

1/2 tspground black peeper
-
4 ccauliflower - bite sized pieces
-
1 pkgfrozen petite peas
-
2 mdpotatoes -cubed
-
2 Tbspground fresh chile paste (i use sambal oelek)
How To Make tasty tomato chicken curry

1Heat curry powder in the bottom of a dry soup pot over medium until fragrant, stirring occasionally to prevent burning - about 3 mins

2add oil, onions, garlic and shallots and mix well. Should form a paste like consistency..Cook for 3-4 minutes

3Add Chicken thighs and brown over medium heat for 5-7 minutes turning as required

4Stir in crushes tomatoes, Salt, Sugar, Bay Leaf,Chile paste and pepper. Mix well and simmer for 60 minutes

5Add cauliflower and potatoes, simmer for 30 minutes longer

6Stir in peas for last 5 mins and serve over rice. Enjoy!!
