Ingredients For spicy coconut chicken curry

    olive oil
  • 2
    chicken breasts, boneless and skinless
  • 1 Tbsp
    thai red curry paste
  • 2 c
    yellow squash, sliced
  • 1
    red bell pepper, diced
  • 1 c
    onion, diced
  • 1
    can coconut milk
  • 1
    jalapeno, diced
  • 2-3 Tbsp
    butter
  • 2 c
    cooked rice, optional

How To Make spicy coconut chicken curry

    Heat oil in large pot over med-high heat. Add the chicken and onion, cook, stirring for about 5 min. Mix in the curry paste and remaining veggies, cook, stirring for a few min. Pour coconut milk into the pot and boil. Add butter and simmer over med. heat until butter melts, chicken is fully cooked. Serve with rice.
