Don't be afraid of the extra step of the rub and sauce. Altogether, It shouldn't take you more than 40 minutes....except for getting your grill to medium high. But you can do other recipe steps while your grill is heating up. I grew up eating white barbecue sauce with chicken....I prefer it with chicken in fact! Feel free to sub mushrooms or zucchini for the cherry tomatoes or red onions....I generally use the veggies I have on hand. Also, feel free to sub chicken breasts....they just won't be as moist and juicy.

1/2 lgred onion, quartered and separated into pieces

- SMOKEY BARBECUE RUB

2 Tbspbrown sugar, firmly packed

2 tspgarlic salt

1 tspdried chipotle powder

1/2 tspground cumin

1/4 tspdried oregano
- WHITE BARBECUE SAUCE

1 1/2 cmayonnaise

1/3 cwhite vinegar
-
1 tspblack pepper

1/2 tspsalt

1/2 tspsugar

1 clovegarlic, pressed
How To Make smoky chicken barbecue kabobs

1Kabobs: Preheat the grill to 350° to 400°F (medium-high) heat. Cut the chicken into 1 inch cubes. Thread the chicken, onion, and tomatoes alternately onto skewers, leaving 1/4 inch space between the pieces. Sprinkle the kabobs with Smoky Barbecue Rub.

2Grill the kabobs, covered with grill lid, 4 to 5 minutes on each side. Serve with white barbecue sauce.

3Smoky Barbecue Rub: Combine all ingredients and stir well.

4White Barbecue Sauce: Combine all ingredients in a jar. Shake well to mix.
