2 mdonions, thin sliced

1/4 tspsea salt

1 / 2 cmushrooms, thin sliced

1 tspfresh thyme, or 1/ 2 dried

4 cchicken stock

2 tspbalsamic vinegar

5 ozchopped kale
-
6 ozsmoked chicken, chopped to bite-sized pieces

1&1 / 2 cwild rice, cooked

salt and pepper to taste

1Heat olive oil in a pot over medium heat, then add onion and salt. Cook stirring occasionally over medium low heat until onions begin to carmelize. 20 - 25 minutes.

2Add mushrooms and thyme and continue to cook 5 minutes. Add the chicken stock and vinegar and bring to a boil

3Stir in chicken, kale, and rice. Bring to a boil, reduce heat to medium low and simmer 5- 10 minutes. Season to taste with salt and pepper.
