    onions, thin sliced
  • 1/4 tsp
    sea salt
  • 1 / 2 c
    mushrooms, thin sliced
  • 1 tsp
    fresh thyme, or 1/ 2 dried
  • 4 c
    chicken stock
  • 2 tsp
    balsamic vinegar
  • 5 oz
    chopped kale
  • 6 oz
    smoked chicken, chopped to bite-sized pieces
  • 1&1 / 2 c
    wild rice, cooked
  • salt and pepper to taste

    Heat olive oil in a pot over medium heat, then add onion and salt. Cook stirring occasionally over medium low heat until onions begin to carmelize. 20 - 25 minutes.

    Stir in chicken, kale, and rice. Bring to a boil, reduce heat to medium low and simmer 5- 10 minutes. Season to taste with salt and pepper.
