This is a chicken dish that makes a wonderful sauce. You can serve this with pasta, mashed potatoes, or couscous. Yummy!!

Ingredients For sicilian style lemon roast chicken

1/4 ccoarse salt

4 cwarm water
-
2cut-up chickens
-
1/2 cextra virgin olive oil

1/4 clemon juice
-
1 tspdried oregano
-
salt and pepper, to taste

4 clovegarlic, smashed or chopped

2 cchicken broth or water
-
lemons, sliced for garnish
How To Make sicilian style lemon roast chicken

1Dissolve sea salt in 4 cups of warm water and let it cool.

2Soak the chicken in water and salt for at least 30 minutes.

3Place the olive oil, lemon juice, oregano, salt, and pepper in a bowl. Whisk well to mix. Add garlic and mix vigorously.

4Rinse and dry with paper.

5Layer the chicken in a glass bowl and pour the marinade on the top. Combine the chicken and marinade making sure each piece is coated well with the marinade. Cover with plastic wrap and refrigerate for a few hours. If you can let it go overnight, do so, it will only make the chicken more delicious.

6When ready to cook, preheat your oven to 375 degrees F. Remove the chicken from the marinade and place it in a roasting pan.

7Bake for 1 hour and 15 minutes. Baste the chicken with the marinade as it bakes.

8When the chicken is cooked, remove from the pan and pour the pan juices into a pan with the remaining marinade. Heat over medium heat. Simmer for a few minutes. Add 2 cups of water or chicken stock. Bring to a boil and then turn off the heat.

9Place the chicken in a single layer on a large platter. Spoon the sauce over the chicken. If desired, add some thinly sliced fresh lemon to garnish.
