Bet you didn't think I could speak Italian, hey?? It's the good old chicken cacciatore, but I was trying to make it real Italian. Enjoy--we do!

Ingredients For polo ala cacciatore

1/4 colive oil

1 tspsalt

1/8 tsppepper

1chicken, cut into pieces

1 clovegarlic

2medium onions, chopped

12mushrooms, sliced

1green pepper, cut into large cubes

1 can8-oz tomato sauce
-
1 cdry white or red wine
-
1 chot chicken broth
-
1 tspbasil

1 tsporegano
-
1bay leaf
How To Make polo ala cacciatore

1Heat oil in a large saucepan. Sprinkle salt and pepper over chicken. Brown on both sides in oil.

2Remove chicken from frying pan. Add garlic and onions and saute until golden.

3Place mushrooms and green pepper in a large baking dish. Arrange chicken on top of mushrooms and green pepper.

4Combine tomato sauce, wine, broth and herbs. Pour over chicken. Bake at 350 degrees for one hour.
