You can use white mushrooms if you prefer. You can use either homemade or jarred pesto sauce.

Ingredients For pesto chicken penne

  • 2
    chicken breasts, boneless and skinless
  • 16 oz
    penne pasta, uncooked
  • 1 c
    chopped fresh spinach
  • 8 oz
    fresh crimini mushrooms, sliced
  • 2 md
    roma tomatoes, diced
  • 1 c
    basil pesto sauce
  • 1 c
    feta cheese crumbles
  • 3 slice
    bacon, cooked crisp and crumbled
  • 2 Tbsp
    olive oil, divided

How To Make pesto chicken penne

  • 1
    Heat 1 Tbsp. oil in skillet. Add spinach, tomatoes and mushrooms. Saute stirring frequently for 5 minutes. Set aside.

    Cut chicken into strips.
  • 3
    Heat another Tbsp oil in skillet. Add chicken strips and cook until chicken is done.

    Add pesto to chicken and saute another 3 minutes. Set aside.
  • 5
    Cook penne according to package directions. Drain.
  • 6
    Place chicken and vegetables in a bowl. Add pesto and toss to coat, mixing chicken and veggies as you do so.

    Sprinkle with feta cheese and bacon crumbles.
