An easy Crock Pot meal on a cold winter day. I always make the (Sweet Corn Bread found on this site) to go with this dish. I typically let it simmer half a day. Depending on the crowd, I add a can of white corn and a dash or two of Tabasco.

This is different from any other white chicken chili recipe we've tried. It's on the mild side and creamy but where it differs is the addition of clove. When you first take a bite, you taste the seasoning and won't be able to put your finger on it. It's a secret ingredient that adds to the overall flavor of this one-pot chicken chili. Cheese and sour cream are great additions and make this richer and creamier. Great for a cold night!

Ingredients For northern white chili

  • 3 c
    cooked chicken, I buy a rotisserie chicken
  • 2 can
    northern white beans, 15 oz each
  • 3 Tbsp
    chopped onion
  • 1 tsp
    butter
  • 1 can
    chiles, canned and mild
  • 1/2 tsp
    oregano, dried
  • 1 dash
    cayenne pepper
  • 2 c
    water
  • 3
    chicken bouillon cube
  • 1 tsp
    cumin
  • 1/2 tsp
    cloves
  • 1 c
    heavy cream
  • shredded monterey cheese
  • sour cream

How To Make northern white chili

  • Shredded chicken in a bowl.

    Shred cooked chicken.
  • Sauteeing onions in butter.

    Sauté onion in butter until tender.
  • Remaining ingredients, except for dairy, added to the pot.

    Add all ingredients minus cream, sour cream, and cheese.
  • Pouring heavy cream into the pot.

    Let simmer on high for one hour or low for as long as needed. Thirty minutes before time to eat, add heavy cream.
  • Shredded cheese and sour cream added to bowl of Northern White Chili.

    Serve with shredded cheese and sour cream (opt).
