Ingredients For mediterranean chicken

1/4 chummus, your choice (i prefer some with garlic and some heat!)

1/4 cfeta cheese, crumbled

3 Tbsptomatoes, diced

2 Tbspkalamata olives, diced

4chicken breast halves, 6 oz each, skinless and boneless

1/4 tspsalt
-
1/4 tspblack pepper
-
1 Tbspolive oil
How To Make mediterranean chicken

1Preheat oven to 350°.

2Combine hummus, feta cheese, diced tomato, and chopped kalamata olives. If your hummus does not have garlic added, add 1 clove minced garlic to your mix.

3Cut a 1-inch-wide slit into the thick end of chicken breast halves, and carefully cut down to center of chicken to form a pocket. Divide cheese mixture evenly among pockets. Secure with wooden picks. Sprinkle chicken with salt and pepper.

4Heat a large ovenproof skillet over medium-high heat. Add olive oil to pan. Add chicken to pan; sauté for 4 minutes. Turn chicken over.

5Bake at 350° for 12 minutes; let stand for 5 minutes.
