I originally got the recipe from yummly.com but there were so many ingredients I didn't like or my mother was allergic. I tweaked it to my liking and serve to my church and family on special occasions.

Ingredients For mango chicken

2chicken breast halves, skinless and boneless

1/2 cmango chunks

1/2 cmango nectar

1 Tbspolive oil

1/2 tspcinnamon

1 tspground ginger

1/2 corange juice, fresh

2 Tbsplime juice, fresh

2 Tbsphoney
-
2 Tbspcornstartch
-
1 1/2 Tbspwater(for cornstarch)

2 Tbspdark rum

salt and pepper
How To Make mango chicken

1Season chicken with salt and pepper (to taste). Place oil in a skillet and turn heat to med-high. When oil is hot sear the chicken on both sides. set aside.

2In a medium to large non-stick pot add all other ingredients and let simmer for 10 minutes. Add the chicken and let simmer for 15 more minutes or until meat is complete done.

3At this time mix the cornstarch and water together. Add to the sauce until you reach your desired thickness.
