I originally got the recipe from yummly.com but there were so many ingredients I didn't like or my mother was allergic. I tweaked it to my liking and serve to my church and family on special occasions.

Ingredients For mango chicken

  • 2
    chicken breast halves, skinless and boneless
  • 1/2 c
    mango chunks
  • 1/2 c
    mango nectar
  • 1 Tbsp
    olive oil
  • 1/2 tsp
    cinnamon
  • 1 tsp
    ground ginger
  • 1/2 c
    orange juice, fresh
  • 2 Tbsp
    lime juice, fresh
  • 2 Tbsp
    honey
  • 2 Tbsp
    cornstartch
  • 1 1/2 Tbsp
    water(for cornstarch)
  • 2 Tbsp
    dark rum
  • salt and pepper

How To Make mango chicken

  • 1
    Season chicken with salt and pepper (to taste). Place oil in a skillet and turn heat to med-high. When oil is hot sear the chicken on both sides. set aside.

    In a medium to large non-stick pot add all other ingredients and let simmer for 10 minutes. Add the chicken and let simmer for 15 more minutes or until meat is complete done.

    At this time mix the cornstarch and water together. Add to the sauce until you reach your desired thickness.
