Ingredients For lime chicken tenders and orzo salad

  • 1-2
    limes
  • 1 1/4 lb
    chicken breast tenders
  • 5 Tbsp
    olive oil, divided
  • 2 clove
    garlic,minced
  • 2 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 1 1/2 c
    orzo pasta, uncooked
  • 3 Tbsp
    red wine vinegar
  • 2 tsp
    country dijon mustard
  • 1 md
    red bell pepper, chopped
  • 3/4 c
    cucumber, peeled and diced
  • 2 Tbsp
    fresh dill, chopped

How To Make lime chicken tenders and orzo salad

    Preheat grill to 300° to 350° (medium) heat.

    Grate zest from limes to equal 1 teaspoons Cut limes in half; squeeze juice from limes to equal 3 tablespoons.

    Combine chicken, lime zest, lime juice, 1/4 cup olive oil, and next 3 ingredients. Let marinate for 1 hour. Remove chicken from marinade, discarding marinade.

    Grill chicken, covered with grill lid, 5 to 7 minutes on each side or until done.

    Prepare pasta according to package directions.

    Combine vinegar, mustard, and remaining 1 tablespoons olive oil.

    Toss orzo, bell pepper, cucumber, and dill with vinegar mixture. Season with salt and pepper to taste. Serve with grilled chicken.
