light and creamy garlic fettuccine with chicken

I love cream sauces. I don't like the fat or calories. I came up with this dish. It is low fat,and delicious. regular Alfredo sauce has about 40 grams of fat per 1/2 cup.Trimming it down. I made this dish at 12 grams of fat per serving.This sauce can be served over chicken or Shrimp.

Ingredients For light and creamy garlic fettuccine with chicken

  • 1/4 c
    part skim parmesan cheese
  • 1/4 c
    reduced fat cream cheese
  • 1/3 c
    fat free feta cheese
  • 2 clove
    garlic divided
  • 1 1/2 tsp
    garlic salt
  • pinch of black pepper
  • 1 tsp
    olive oil
  • 1 can
    reduced sodium chicken broth
  • pinch
    salt
  • 1/2 lb
    fettuccine( pictured spinach fettuccine,and regular together)
  • bunch
    fresh basil if desired
  • 1 1/2 c
    skim milk
  • 1 1/2 Tbsp
    corn starch or 2 tablespoons flour to thicken
  • bunch
    asparagus or broccoli crowns

How To Make light and creamy garlic fettuccine with chicken

    Cut chicken and cube in to 1- 1/2 inch pieces.Poach chicken on stove in chicken broth until cooked. Set aside.

    In a food processor add 1 large clove of Garlic,Feta cheese,cream cheese,(Basil,optional) Garlic salt,and a dash of pepper.Process until smooth and thick,and Set aside.

    Heat water and cook Fettuccine. Strain and reserve some pasta water to cook Asparagus,or Broccoli.

    In a large pan heat olive oil,and toss poached chicken in with chopped Garlic, salt,and pepper to taste.Cook until light brown,or hot.Remove chicken from pan.Put Asparagus,or Broccoli in the pasta water and cook to desired tenderness.

    In the pan you cooked chicken in.Heat skim milk with corn starch. Stir until thickened. Add the cheese mixture you processed. Stir and cook until hot about 5 minutes.
  • Shown with Spinach and regular Fettuccine

    Put Pasta on a plate with chicken and Asparagus,or Broccoli. Pour sauce on top. season with salt and pepper.
