I received this recipe from a friend many years ago. I have made it with leftover turkey and it is delicious.

Ingredients For hot chicken salad

4 ccubed cooked chicken or turkey. approximately 8 chicken breast

2 Tbsplemon juice

2/3 calmonds, chopped

3/4 cmayonnaise

1 tspsalt

1 cgrated cheddar cheese

2 ccelery, chopped
-
4hard boiled eggs, sliced

1 cancream of chicken or mushroom soup

1 Tbsponion, minced
-
1 cpotato chips, crushed
-
1/4 cgreen pepper, chopped

2 canwater chestnuts, sliced
How To Make hot chicken salad

1Saute the chopped almonds in butter until browned

2Combine chicken cubes with all ingredients except the potato chips

3Put into a 9 X 13 inch baking dish

4Sprinkle the top with the potato chips
-
5Bake 20 - 25 minutes in a 375 degree oven

6The casserole can be made ahead of time and refrigerated or frozen. If this is done the potato chips should not be added until ready to go into the oven.
